11 Healthy Breakfast Ideas for Busy People

Well, we all know that the Breakfast is the most important meal of the day. I wrote a couple of articles on the subject a few years ago. Back than I believed healthy breakfast to be the best start of the day, and I believe it now, as well.

I am sure, that even if you don’t eat breakfast, these 11 recipes will tempt you to make at least one breakfast in the next few days…

Healthy Breakfast – what’s in it?

In order to be healthy your breakfast should contain protein, carbohydrates and quality fats. 3 times per week I go to the gym, so these days my breakfast varies from my rest days. For example on my gym day I eat more carbs, and on my rest days I eat more seasonal fruits and add some potatoes or rice in my dinner.

When I hear breakfast, only two things come to my mind – coffee and pancakes πŸ™‚ I have 4 different pancake breakfast ideas and I am pretty sure your next breakfast will be one of these:

1. Healthy Breakfast Idea – Sweet potato pancake

Ingredients:

  • 1 sweet potato
  • 2 eggs
  • vanilla powder
  • cinnamon powder
  • 1 tsp of honey

Preparation:
Boil the potato and mash it with a fork. Add the other ingredients and mix well. Cook the pancake in a pan with a pinch of butter.

Serving
Add the honey topping and voila – your perfect breakfast pancake is ready πŸ™‚

2. Healthy Breakfast Idea – Coconut pancake

Ingredients:

  • 3 tsp grinded coconut
  • 3 eggs
  • 1 banana
  • vanilla powder
  • 2 tsp natural cacao powder
  • cinnamon powder
  • coconut oil

Preparation:
Mash the banana with a fork. Add the other ingredients and mix well. Cook the pancake in a pan covered with a lid. Don’t forget to oil the pan with a pinch of the coconut oil. When the edges of the pancake begin to crisp up, the top rises and the eggs are cooked, it’s an indication it’s ready to be flipped, so now you can remove the lid and flip it.

Serving
Add some honey topping (about 1 stp) and your coconut pancake is ready πŸ™‚

3. Healthy Breakfast Idea – Pumpkin pancake

Ingredients:

  • 150g grated pumpkin
  • 3 eggs
  • vanilla powder
  • honey and/or 2 nuts

Preparation:
Mix all well – the pumpkin, eggs and vanilla. Cook the pancake in a pan with a pinch of butter.

Serving
Add some honey topping (about 1 stp) and/or a pinch of chopped nuts and your pumpkin pancake is ready πŸ™‚

4. Last Pancake Recipe – Salty pancake

    For the pancake bΠ°tter:

  • 3 tsp grinded coconut
  • 2-3 eggs
  • 1/2 diced zucchini
  • 1/2 dices carrot
  • 1/4 diced red pepper
  • salt and pepper to taste
  • For the topping:

  • 100g fat free cheese
  • 1 tbsp fat free yogurt
  • 1 tsp chopped olives
  • savory herb to taste or any other favorite herb you have πŸ˜‰

Preparation:
Mix all ingredients for the pancake batter and cook the pancake in a pan with a pinch of butter. You can use a lid to stew it if you like.
For the topping – mix all ingredients in a small bowl.

Serving
Add the topping you just prepared on the top of this delicious salty pancake and enjoy your breakfast πŸ™‚

5. Healthy Breakfast Idea – Pumpkin bread

Ingredients:

  • 200g baked pumpkin
  • 1 banana
  • 50g coconut flour
  • 2 eggs + 2 extra egg whites
  • 1/2 tsp baking powder
  • 3 tsp honey
  • Cinnamon, vanilla, a pinch of ginger – add any you like to your taste

Preparation:
Mash the pumpkin and the banana, add all other ingredients. Bake in the oven for 30 minutes with some butter at the bottom of the pot. If you don’t have time for baking, then you can cook the pumpkin bread as a pancake in a pan.

Serving
Wait 15 minutes to cool before slice it up.

6. Healthy Breakfast Idea – Tahini pumpkin dessert

Ingredients:

  • 2 tsp tahini
  • 100g flax flour
  • 2 eggs + 2 extra egg whites
  • 100g pumpkin puree
  • 2 tbsp cottage cheese
  • 1 tbsp honey
  • Vanilla
  • Handful crushed almonds

Preparation:
Mix well all ingredients. Form small balls from the tahini pumpkin mixture and bake them on a parchment paper in the oven for not more than 15 minutes.

Serving
Wait 15 minutes to cool before slice it up.

7. Healthy Breakfast Idea – Pancake cake with berry yogurt cream and rum

Ingredients:

  • 6 eggs
  • 150 ml milk (5 fl oz)
  • 250 g yogurt (9 oz)
  • 3 tbsp grinded coconut
  • 300g blueberries (10 oz)
  • 3-4 tbsp honey
  • 3 ounces raw almonds
  • 3 tsp coconut oil
  • 1 Vanilla extract
  • 1 Rum extract (1 fl oz)

Cake layers preparation:
Beat the eggs add the grinded coconut, the coconut oil and the vanilla extract. Pour some milk and stir. Make sure not to make the pancake batter too thick. Bake 3 pancakes in a pan oiled with coconut oil. When ready, spread some of the honey on top of the pancakes to make them softer.

Berry yogurt cream preparation:
Stir the yogurt, add the blueberries, the rum extract and 2 tbsp of honey. Mix well and your cake cream is ready πŸ˜‰

Cake layering:
Spread thin layer of the berry yogurt cream on the top of each pancake and don’t forget to add some crushed raw almonds on top. Lay another pancake on top and continue the thin spreading and layering until all the pancakes are stacked.

Serving
Let the cake rest in the fridge for 2-3 hours before slicing. It is magnificently delicious.

Last 4 Healthy Breakfast Ideas – quite simple and especially useful for really busy people

8. Yogurt with fruits

Ingredients:

  • 400g yogurt (14 oz)
  • 1 banana sliced
  • 1/2 tsp cinnamon spread

Preparation:
You don’t need me to explain how to mix these. This breakfast idea is delicious, but not satisfying for longer periods of time. So it’s just a back up idea in case you don’t have time for anything else to prepare πŸ˜‰

9. Healthy Breakfast Idea for when you are running late – boiled eggs

  • 2 eggs
  • some fresh vegetables
  • 1 avocado
  • 1 fresh fruit

Preparation:
Add the eggs to already boiling water, thus they will cook faster while you are getting ready for work. Once the eggs are boiled enough to your taste, add the fresh veggies, avocado and fruit in a lunch box.

Serving
Eat your breakfast later in the morning when you have time.

10. Healthy Breakfast Idea for when you are running late – raw eggs

This recipe is recommended only for people who eat raw eggs.

Ingredients:

  • 3 raw eggs
  • 1 banana
  • 1/2 avocado
  • 2 tbsp coconut milk
  • Vanilla extract

Preparation:
Blend all ingredient in a blender.

Serving
This healthy breakfast idea is some sort of a raw egg smoothie with avocado and banana. If you like raw eggs taste then it’s just for you πŸ˜‰ Drink it all for breakfast.

11. Healthy Breakfast Idea for when you are running late – Fruit yogurt smoothie

This recipe is recommended for people who are in a hurry in the morning. Instead of slicing the fruits, you must use a blender.

Ingredients:

  • 300g yogurt
  • 1 banana
  • Handful of your favorite berries (I prefer blueberries)
  • 1/2 avocado
  • 1-2 tbsp coconut milk
  • Vanilla extract

Preparation:
Blend all ingredient in a blender.

Serving
Drink it all for breakfast.
